Salmon slices on chicory

For 1 person:
200 g salmon
20 g butter
½ espresso cup full of brandy
120 cl cream
1 sprig of dill
1 chicory
Cut chicory in 4 parts, add salt and bake in the oven at 180 degrees Celsius for 12 minutes. In the meantime, heat butter in a pan, add the salmon and fry. Then add the dill and douse (deglaze) with brandy. Finally, pour in the cream and let everything cook for 6-8 minutes. Place the chicory on a plate and arrange the salmon with the sauce on it.

Holiday: Four weeks after Easter and from the last week of November until the first half of December.
