Carne salada

For 1 person:
80 g veal shank (4 slices)
60 g rocket
1 apple
10 g sugar
Ground spices
Tenderize the 4 slices until they are very thin with a meat tenderizer. Marinate the slices in salt and spices for 24 hours. Cut the apple into small pieces and cook until soft in a pot with the sugar and a little water and then purée the apple with a purée wand. Arrange the rocket on a plate and drape with the sliced veal. Finally, serve with the apple compote.
