Eggs Ampezzano-style

For 1 person
2 eggs
3 cooked potato slices
35 g red onions, sliced
65 g Tyrolean speck
Olive oil
Fry the potatoes with the speck and the onions in a pan until golden brown. Fry the eggs sunny-side up and cover the potatoes with them.

Dinner: 6.00 p.m.-12.00 a.m.

Day off: Wednesday

Holiday: Four weeks after Easter and from the last week of November until the first half of December.
